Ingredients:
- 1 1/2 cups almond flour
- 1/2 cup cocoa powder
- 4 teaspoon collagen powder
- 1/2 teaspoon baking soda
- 15 Medjool dates, pitted
- 1/2 cup heavy cream
- 3 eggs
- 1/2 cup grass-fed butter, melted
- 1 tablespoon almond extract
- 1 tablespoon vanilla
Instructions
1. Preheat & Prepare:
- Preheat oven to 350F (175C)
- Grease an 8-inch cake pan
2. Soak & Blend Dates:
- In a food processor soak the pitted dates and heavy cream for 10 minutes
- Blend or smash until smooth
3. Mix Dry Ingredients
- In a medium bowl, mix together almond flour collagen powder, cocoa powder, baking powder, and baking soda.
- Set aside
4. Add Wet Ingredients
- To the dates in the food processor, add together the eggs, melted butter, and almond extract and mix until smooth.
5. Combine everything
- Gradually add the wet ingredients into the dry ingredients and fold together well.
6. Bake
- Pour the batter into the prepared cake pan
- Bake for 25~30 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool & Serve
- Let the Cake cool for at least 10 minutes before slicing
- Serve as is or with fresh fruit for a naturally sweet garnish
