Healthy Moist Chocolate Cake

A rich, velvety chocolate cake made with almond flour and naturally sweetened without any added sugar — moist, decadent, and guilt-free!

Servings: 10
Preparation Time: 15 minutes
Bake Time: 30 minutes

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup cocoa powder
  • 4 teaspoon collagen powder
  • 1/2 teaspoon baking soda
  • 15 Medjool dates, pitted
  • 1/2 cup heavy cream
  • 3 eggs
  • 1/2 cup grass-fed butter, melted
  • 1 tablespoon  almond extract
  • 1 tablespoon vanilla

Instructions

1. Preheat & Prepare:

  • Preheat oven to 350F (175C)
  • Grease an 8-inch cake pan

2. Soak & Blend Dates:

  • In a food processor soak the pitted dates and heavy cream for 10 minutes
  • Blend or smash until smooth

3. Mix Dry Ingredients

  • In a medium bowl, mix together almond flour collagen powder, cocoa powder, baking powder, and baking soda.
  • Set aside

4. Add Wet Ingredients

  • To the dates in the food processor, add together the eggs, melted butter, and almond extract and mix until smooth.

5. Combine everything

  • Gradually add the wet ingredients into the dry ingredients and fold together well.

6. Bake

  • Pour the batter into the prepared cake pan
  • Bake for 25~30 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Serve

  • Let the Cake cool for at least 10 minutes before slicing
  • Serve as is or with fresh fruit for a naturally sweet garnish

Tips

  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
