I’ve been a Certified Holistic Health Coach since 2016, helping women improve their health through holistic nutrition, lifestyle balance, and sustainable wellness practices.
After being diagnosed with thyroid cancer and undergoing a thyroidectomy, I made a life-changing decision to take control of my health. I returned to school to study holistic health and dedicated my work to supporting women in understanding their bodies and restoring balance naturally. Through this journey, I lost 58 pounds and over 60 inches, regaining my vitality and confidence.
As I entered menopause myself, I experienced firsthand how hormonal changes can affect weight, energy, and overall well-being. This year, I officially became a Menopause Health Coach, expanding my work to focus on hormone balance, symptom support, and sustainable weight loss during midlife.
Today, through New You Forever, I support women through menopause using a personalized, holistic approach that emphasizes nutrition, lifestyle, and long-term wellness. I am currently developing a Healthy Menopause Program designed to help women feel balanced, empowered, and confident at every stage.

This is more than a collection of recipes. It’s a tribute to my mother’s legacy, a love letter to her, and a celebration of the rich tapestry of Palestinian home cooking she passed down to me. It also looks ahead to the bright futures we can build together in her honor. This cookbook preserves the cherished flavors of Palestine while offering easy, nutritious adaptations for today’s busy lifestyle.
Inside, you’ll find a blend of traditional family recipes passed down through generations, alongside modern, healthy twists that honor the soul of each dish. From comforting classics like Makluba and Kibbeh Bil Sanieh to vibrant salads and wholesome sweets, every recipe is crafted with simplicity and love. Clear instructions, wholesome ingredients, and optional shortcuts make the dishes accessible to cooks of all levels.
Food has always meant more than just nourishment in my family - it was my love, healing, tradition, and connection. I grew up in a home filled with the aromas of freshly baked bread, simmering spices, and my mother’s voice echoing in the kitchen as she cooked from the heart. My beloved mother, Halema Salama Gaber, was the soul of our home. Though she never had the chance to go to school, she taught me life’s most important lessons through her sacrifices, hands, and recipes.
To continue my, mother’s legacy of generosity and empowerment, a percentage of profits from this book will go toward supporting Palestinian students who cannot afford higher education.
