Ingredients:
For the Salad:
- 2 oz baby kale
- 4 oz mesclun lettuce mix
- 1 pint blueberries
- 1 pint raspberries
- 1 pint blackberries
- 16 oz strawberries, hulled and sliced
- ½ cup thinly sliced fennel
- ¼ cup roasted nuts (pecans or walnuts recommended)
For the Dressing:
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Pinch of Himalayan salt
- Balsamic glaze, for drizzling
Instructions:
1. Prepare the Greens:
- Wash and dry the baby kale and mesclun lettuce mix.
- Optional: massage the baby kale gently to soften if desired.
2. Assemble the Salad:
- In a large bowl, combine the baby kale and mesclun mix and fennel.
- Add the nuts.
3. Make the Dressing:
- In a small bowl, whisk together the balsamic vinegar, olive oil, and a pinch of Himalayan salt.
4. Toss and Serve:
- Drizzle the dressing over the salad and mix well, then add the blueberries, raspberries, blackberries and sliced strawberries.
- Toss gently to combine, ensuring the dressing coats the greens and berries evenly.
- Sprinkle the roasted pecans or walnuts over the top of the salad.
- Finish with a generous drizzle of balsamic glaze on top.
- Serve immediately and enjoy!
