Zucchini Pesto Noodles w/ Chicken
Ingredients for the oodles:
2 large zucchini
1 teaspoon grass fed butter
1 tablespoon minced garlic
1/2 cup olives
a dash of salt
a dash of pepper
Ingredients for the pesto sauce:
1 cup baby spinach leaves
1/2 a cup fresh basil
1/4 cup walnuts
1 tablespoon minced garlic
1 tablespoon olive oil
A dash of Himalayan salt
A dash of black pepper
- For the pesto sauce add all the ingredients in the food processor and purée. Process until smooth then set aside.
- With your veggie spiral cutter spiral your zucchini. Put it in a separate bowl aside.
- In a medium sauce pan heat 1 teaspoon butter with the 1 Tablespoon minced garlic. Then add the and zucchini and the salt and pepper let it cook for minutes. After the zucchini is tender put in a plate set aside.
- Then add 1 teaspoon grass fed butter in a small sauté pan and add your chicken till it’s cooked after it’s cooked put it on top of the zucchini.
- Then add the pesto sauce to the zucchini pot then add olives then mix it well for a minute. Then take it off the heat.
- Then combined your chicken and your zucchini together on your plate.
