Zucchini Pesto Noodles w/ Chicken

Ingredients for the oodles:

2 large zucchini

1 teaspoon grass fed butter

1 tablespoon minced garlic

1/2 cup olives

a dash of salt

a dash of pepper

Ingredients for the pesto sauce:

1 cup baby spinach leaves

1/2 a cup fresh basil

1/4 cup walnuts

1 tablespoon minced garlic

1 tablespoon olive oil

A dash of Himalayan salt

A dash of black pepper

  • For the pesto sauce add all the ingredients in the food processor and purée. Process until smooth then set aside.
  1. With your veggie spiral cutter spiral your zucchini. Put it in a separate bowl aside.
  2. In a medium sauce pan heat 1 teaspoon butter with the 1 Tablespoon minced garlic. Then add the and zucchini and the salt and pepper let it cook for minutes. After the zucchini is tender put in a plate set aside.
  3. Then add 1 teaspoon grass fed butter in a small sauté pan and add your chicken till it’s cooked after it’s cooked put it on top of the zucchini.
  4. Then add the pesto sauce to the zucchini pot then add olives then mix it well for a minute. Then take it off the heat.
  5. Then combined your chicken and your zucchini together on your plate.
  6. Enjoy your healthy pasta serving for you!
