Rainbow Salad
1 cup lettuce
1 cup spinach
1 cup chicory
1 Celery stick
1 carrot
1 endive
1 small beet slice thin
1 avocado
4 small cherry tomatoes
1 tablespoon pumpkin seeds
10 pecans
10 walnuts
12 olives
1 tbs. Balsamic vinegar
2 tbs olive oil
Dash of Himalayan salt and pepper
Mix all the ingredients together in a large bowl.
